90-100ml uncooked quinoa.
1⁄2 cucumber, peeled and finely diced
2 Roma tomatoes, or 8-10 cherry tomatoes finely diced 1/2 small red onion, finely chopped (1/2 cup)
1Tsp olive oil.
3 Tbs. lemon juice.
2 tsp. grated lemon zest.
Salt and pepper to season
Cook the quinoa, strain and leave to cool.
Chop the tomatoes and cucumber and when ready to serve, mix in the oil, lemon juice and zest and season to taste.
