Chicken and Sausage Cassoulet


1 can of Haricot or Butter Beans

500g Spicy Italian Sausages or Criolla

250g Pork Sausages

750g Chicken breast cubed

250g Bacon

1tbs Olive Oil

2 Cloves Garlic

12 peppercorns

5 baby onions (Halved)

4 Carrots diced

125ml white wine

750ml Water

2 tbs Tomato Paste


Heat oil and cook chicken and sausages in batches.  Add bacon, then return the rest of the meat to the pan along with the onions, garlic, tomato paste, carrots, peppercorns for roughly five minutes.

Add the white wine and then the water and the beans and leave to simmer for 45 minutes to an hour.  This can be cooked on the hob or in the oven.
