Indian Golden Lentil and Carrot Soup

Base Veg Ingredients

  • 125g Onions
  • 125g Carrots
  • 125g Celeriac
  • 1 tbs oil

Hero Ingredients

  • 150g Carrots
  • 100g Split Red Lentils

Other Ingredients

  • 5 Litres Vegetable Stock
  • 1 Tbs Curry Powder
  • 1 Tbs Tamari or Soy Sauce
  • ½ Tsp Ground Cumin
  • ½ Tsp Ground Turmeric
  • ½ Tsp Ground Black Pepper
  • 1 Tsp Chilli Flakes

 

Method

  • Finely slice the onion, peel and chop the Celeriac into roughly 1cm cubed pieces and slice the carrot.
  • Heat the oil and fry the Onions, Carrots and Celeriac at a high heat for a couple of minutes
  • Reduce the heat and cover, letting the vegetables cook in their own steam for roughly 10 minutes.
  • Add the lentils and leave for another 2-3 minutes before adding the stock and all the spices.
  • Reduce the heat and cover again and leave to simmer for 20 minutes or until all the vegetables and lentils are cooked.
  • Blend until the mixture is smooth-ish! Adjust seasoning if required and serve.
