Ingredients
- ½ teaspoon vanilla extract
- 1 egg
- 175g dark brown soft sugar
- 100g butter, softened
- 125g plain flour
- ½ teaspoon bicarbonate of soda
- ¼ teaspoon salt
- 125g porridge oats
- 50g plain chocolate chips
- 75g raisins
- 30g chopped pecans (optional)
- Preheat oven to 180 C / Gas 4. Grease baking trays. (Mark 5 in the motorhome)
- In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Combine flour, bicarb and salt; stir into the creamed mixture. Mix in the oats, chocolate chips, raisins and pecans, one ingredient at a time. Drop by rounded spoonfuls onto the prepared trays.
- Bake for 8 to 10 minutes in the preheated oven (6 minutes each direction – i.e 12 minutes in total in the motorhome)/ of cooking as 1 cookie in remoska tria 40-45 mins. Allow cookies to cool on baking tray for 5 minutes before transferring to a wire rack to cool completely.
