Ingredients
1 Large Onion, Chopped
1 Large Red Pepper, Chopped
5 cloves Garlic, finely chopped
8 cups vegetable stock
4 teaspoons chilli powder
450g brown/green lentils
2 cans chopped tomatoes
1 can Kidney beans
Method
Heat a large pot over a medium heat, when hot add a little oil and add onion and pepper and cook until softened and lightly browned. Add Garlic and chilli powder and cook for 1 minute stirring constantly. Add Lentils, Tomatoes, kidney beans and stock and bring to the boil. Reduce the heat and simmer for 30 minutes partially covered or until the lentils are cooked. Uncover and cook for a further 10 minutes.
