Vegan Curry Burger

Ingredients

  • ½ can chickpeas
  • 60g uncooked rice/200g cooked
  • 85g  uncooked lentils/300g cooked
  • 5 garlic cloves, grated
  • 1/2 Veg stock cube
  • ½ onion, finely diced
  • 1 tsp Turmeric
  • ½ tsp Chilli flakes
  • 1 tsp heaped Curry powder
  • 1 tsp Herbs
  • 1 small handful raw Cashew nuts

Method

Cook rice and lentils as indicated in the packet; use ½ veg stock cube for the lentils.

Add all ingredients to a blender and blend until smooth and can form into patties; If you don’t have a blender then you can mash just as easily as they don’t need to be a puree.

Cook for 4-5 mins on each side or until brown on a medium heat.
