Lentil, Sun dried tomatoes and Goats cheese Salad

This is an Ainsley BBQ recipe and we make it all the time …. simple and tasty…

Ingredients (for 6 people)

225g Lentils (Puy or green)

1 teaspoon Red wine vinegar

2 Garlic cloves

1 large red onion

50g Sun dried tomatoes

1-2 tablespoons balsamic vinegar Cream

4 tablespoons Olive Oil

100g Goats Cheese (or Feta if you prefer)


Peel the Garlic and add to the lentils along with the red wine vinegar and cook for the time on packet – normally around 20-25 minutes – check to make sure they don’t loose their form and become over-cooked.

Once cooked, leave the lentils to cool.

Chop the onion and Sun dried tomatoes and the cooked garlic cloves.  Chop the cheese into chunks and mix in with the cooled lentils, adding the olive oil and Balsamic Vinegar Cream to taste.
