3 oz sugar
1 tsp baking powder
Pinch of salt
4 oz butter
Mix together the four, butter, baking powder and salt. Use your hands to crumble the butter. Add the egg and combine. Try to limit the amount you touch the pastry to combine it. Put it in cling film and leave in the fridge for at least an hour before using.
Take the pastry out of teh fridge approximately 30 minutes before you want to use it.
Pastry will freeze or can be kept in the fridge for a week.
