Kale Pesto

Ingredients – 4 people

  • 100g Steamed Kale
  • 3 cloves garlic
  • 100g toasted cashew nuts
  • 150g oil (preferably sunflower)
  • Juice of 1 lime
  • 1 tsp salt

Method

  • Toast the cashew nuts in a dry pan.
  • Blanch the Kale in boiling water for 2 minutes and drain.
  • Put all ingredients into the blender and blend until smooth-ish, taste and adjust seasoning.
  • This is enough for two meals for us so half can be frozen.
