Ingredients – 4 people
- 100g Steamed Kale
- 3 cloves garlic
- 100g toasted cashew nuts
- 150g oil (preferably sunflower)
- Juice of 1 lime
- 1 tsp salt
Method
- Toast the cashew nuts in a dry pan.
- Blanch the Kale in boiling water for 2 minutes and drain.
- Put all ingredients into the blender and blend until smooth-ish, taste and adjust seasoning.
- This is enough for two meals for us so half can be frozen.
