Ingredients
- 1 medium sweet potato (approx. 280g), diced into 1.5cm and cooked
- 1 small red onion, sliced finely
- 210g pre-cooked quinoa
- 180g broccoli cut into chunks, blanched for 2 minutes
- 1 avocado, diced
- 160g hummus
- 2 tbsp seeds to serve
- Handful of chopped nuts to serve
For the dressing
- 2 tsp chilli flakes
- 3 garlic cloves, grated
- 2 cm ginger, grated
- 2 limes, juiced and zested
- 10g coriander, chopped finely
- 3 level tbsp crunchy peanut butter
- 1 tbsp soy sauce
Method
Mix all the ingredients together for the dressing until well combined.
Add all the broccoli, sweet potato, onion, avocado and quinoa to a large bowl and mix in the sauce until combined. Sprinkle over the nuts and seeds to give an extra crunch
Add the hummus to the side of the plate and enjoy!
