Onion Fried Rice – Bosh

  • 1 red onion, finely sliced
  • 1 tbs cumin seeds
  • 2 inch piece of ginger, grated
  • 1 tbs vegetable oil
  • 2 tbs soy sauce / 1 tsp fava bean paste
  • ½ tsp chilli flakes
  • 2 portions of cooked basmati/wild rice still hot

Method

  • Add the oil to the frying pan and when hot, add the cumin seeds and fry for about 1 minute until they are a shade darker and fragrant.
  • Add the onion and ginger and continue to fry for 10-15 minutes until the onions are caramalised
  • Add the soy sauce and chilli flakes and cook for a further minute, stirring to combine.
  • Add the mix to the hot, cooked rice and serve immediately
