- 1 red onion, finely sliced
- 1 tbs cumin seeds
- 2 inch piece of ginger, grated
- 1 tbs vegetable oil
- 2 tbs soy sauce / 1 tsp fava bean paste
- ½ tsp chilli flakes
- 2 portions of cooked basmati/wild rice still hot
Method
- Add the oil to the frying pan and when hot, add the cumin seeds and fry for about 1 minute until they are a shade darker and fragrant.
- Add the onion and ginger and continue to fry for 10-15 minutes until the onions are caramalised
- Add the soy sauce and chilli flakes and cook for a further minute, stirring to combine.
- Add the mix to the hot, cooked rice and serve immediately
