Ingredients
- 200g Broccoli
- 1 Onion finely chopped
- ¼ inch fresh Ginger grated
- 1 clove garlic, finely chopped
- ½ teaspoon chilli powder
- ½ teaspoon curry powder
To temper
- 1 teaspoon Oil
- 1 teaspoon Mustard seeds
- 1 teaspoon Cumin seeds
Instructions
Cut broccoli into small bite size pieces and blanch quickly (30 seconds – 1 minute), just to take the edge off of it.
Then heat a pan with oil and add the mustard seeds, followed by cumin seeds in low heat, without burning it and stir for a minute until they start to pop.
Add onion and fry for 5 minutes or until the onion turns translucent and soft. Then, add the garlic, ginger, chilli powder and curry powder and cook for a further 1-2 minutes.
Stir in the broccoli and cook for another couple of minutes until warmed through and all broccoli has a good spice coating.
Add the toasted almonds and serve.
