Curried Barley Porridge

Serves 4

Ingredients

  • 125g Pearl Barley
  • 250g red lentils
  • 200g peas
  • 1 medium onion
  • 1.1 ltr stock
  • 1.5 tbsp curry powder

Method

  • Using the pressure cooker, fry off the onion for roughly 10 minutes until translucent.
  • Add the red lentils, pearl barley, stock and curry powder and stir all the contents so they are mixed in.
  • Bring the pressure cooker up to heat and cook for 15 minutes.
  • Turn off and leave to release pressure naturally – 7-10 minutes.
  • Stir in the peas and either serve warm or leave to cool and have cold for breakfast
