Cool cucumber and yoghurt dip – Prashad

  • 1 medium cucumber
  • 300g plain set live yoghurt
  • ¼ tsp salt
  • ¼ tsp sugar
  • ½ tsp ground cumin
  • Pinch of turmeric
  • 1 medium carrot, grated

Masala

  • 1 fresh green chilli / ¾  tsp chilli flakes
  • 1 clove garlic
  • Pinch of salt

Method

  • Add the Masala ingredients to a blender and whizz to form a paste
  • Grate the cucumber into a colander and squeeze to remove as much water as possible.
  • Put the masala paste, yoghurt, salt, sugar and spices together in a bowl and mix thoroughly but gently to break the yoghurt into a smooth texture.  Take care not to mix too vigorously as it will separate.
  • Gently, fold in the grated cucumber and carrot.
