4 ramekins
Ingredients
- 154g Dark Chocolate
- 80g warm water
- 2 medium eggs
- 15g Honey
- 1 tbsp Cristalised Ginger
Add the chocolate and warm water to a glass dish and melt above hot water. (Bain Marie)
Separate the eggs from the yolks. Which the egg whites until soft peaks and then add the honey little by little.
When chocolate is melted, mix well to ensure all the water is incorporated, then whisk in the egg yolks.
Add a spoonful of the egg white to the chocolate and fold in, repeat until it is all incorporated.
Add the chopped cristalised ginger and then divide between ramekins
Leave to cool for at least 2 hours in the fridge
