Ingredients – serves 3
- 2 tbsp extra virgin olive oil
- 1 large onion
- 1 large carrot
- 3 cloves garlic
- 1 tin tomatoes
- 1 tin chickpeas
- 1 tin artichokes, drained
- 80g sundried tomatoes in oil
- 75g green olives
- 200g green beans (or similar)
- 1 lemon, juiced
Method
- Heat the oil in a large pan and sauté the onion until browned, then add the carrot and garlic and sauté for another minute.
- Add the chickpeas, tinned tomatoes, artichokes, sundried tomatoes and olives and bring up to a simmer. Cover with a lid and cook for 10 minutes
- Stir in the green beans and cook until tender, adding the lemon juice and seasoning at the end.
