Artichoke and Sundried

Ingredients – serves 3

  • 2 tbsp extra virgin olive oil
  • 1 large onion
  • 1 large carrot
  • 3 cloves garlic
  • 1 tin tomatoes
  • 1 tin chickpeas
  • 1 tin artichokes, drained
  • 80g sundried tomatoes in oil
  • 75g green olives
  • 200g green beans (or similar)
  • 1 lemon,  juiced

Method

  • Heat the oil in a large pan and sauté the onion until browned, then add the carrot and garlic and sauté for another minute.
  • Add the chickpeas, tinned tomatoes, artichokes, sundried tomatoes and olives and bring up to a simmer.  Cover with a lid and cook for 10 minutes
  • Stir in the green beans and cook until tender, adding the lemon juice and seasoning at the end.
  • Serve with mash … butterbean is the way forwards
