Makes 12
Ingredients
- 3 tbsp honey
- 3 tbsp oil
- 2 tbsp flax seeds
- 4 tbsp water
- 200g ground almonds
- 50g pecan nuts
- 1 pinch salt
- 80g 70% chocolate, chopped (or use dark chocolate chips)
Method
- Preheat oven to 180 degrees
- In a small bowl / cup mix together the flax seed and water, then set aside
- In a medium sized bowl, mix together brown sugar and oil. Add in the flax seed mix and combine well.
- Add the ground almonds and fold to combine
- Sprinkle in the salt, chocolate (chopped)/chocolate chips, pecan nuts and fold again
- Split the cookie dough into 12 equal balls and place onto a baking tray and flatten slightly with your palm (it helps if you wet your hands slightly)
- Cook in the oven for roughly 12 minutes
- Leave to cool and enjoy.
