Almond, Pecan and Chocolate Cookies

Makes 12

Ingredients

  • 3 tbsp honey
  • 3 tbsp oil
  • 2 tbsp flax seeds
  • 4 tbsp water
  • 200g ground almonds
  • 50g pecan nuts
  • 1 pinch salt
  • 80g 70% chocolate, chopped (or use dark chocolate chips)

Method

  • Preheat oven to 180 degrees
  • In a small bowl / cup mix together the flax seed and water, then set aside
  • In a medium sized bowl, mix together brown sugar and oil.  Add in the flax seed mix and combine well.
  • Add the ground almonds and fold to combine
  • Sprinkle in the salt, chocolate (chopped)/chocolate chips, pecan nuts and fold again
  • Split the cookie dough into 12 equal balls and place onto a baking tray and flatten slightly with your palm (it helps if you wet your hands slightly)
  • Cook in the oven for roughly 12 minutes
  • Leave to cool and enjoy.
